The Southern Foodways Alliance (, an organization based in Oxford, Mississippi, is dedicated to documenting and preserving the food of the American South. The SFA creates food trails of people who serve traditional Southern cuisine and plots their locations on maps for travelers to download. So far, the organization has four, including Gumbo, Boudin, and Hot Tamale. The newest addition: A barbecue trail. "We’ve started on Alabama barbecue, and we're working on Texas," says Amy Evans, an oral historian for the SFA.
