But don't uncork it yet; your blend will have to age at least one year. For more immediate results, Urban Wineworks (407 N.W. 16th St., Portland, Oreg.; 866/467-4668; $25) uses newly harvested varietals—Cabernet Sauvignon, Merlot, and Cabernet Franc—that can be sipped straightaway.
