The Drinks: Elad Zvi and Gabriel Orta make some of the city’s best cocktails, such as the Kundalini Ways: Olmeca Altos tequila with fresh turmeric.

Latitude29, New Orleans

The Setting: A courtyard with a glowing pool at the French Quarter’s circa 1835 Bienville House hotel.

The Vibe: A Midcentury-style hot spot rescuing cocktail aficionados from Bourbon Street.

The Drinks: Large ceramic bowls hold kitschy concoctions for sharing (try the rum-heavy Lapu Lapu), poured by local tiki god Beachbum Berry.

Laddershed, London

The Setting: The outdoor terrace of the posh new Chiltern Firehouse, a revitalized Victorian-Gothic fire station from 1888.

The Vibe: Sexy, discreet A-list magnet with a fireplace—but it’s only open until 9.

The Drinks: Gin is the specialty: try the super-refreshing Ravello Breeze (Tanqueray, Lillet, saffron syrup, and citrus).

Sundara, Bali

The Setting: The Four Seasons Jimbaran Bay’s new restaurant and lounge has daybeds around an infinity pool and panoramic water views.

The Vibe: Louche and sophisticated, thanks to candlelight, elevated cuisine, and chill DJ tunes.

The Drinks: Cocktails by Barcelona master Javier de las Muelas incorporate local ingredients, such as the mango in the bourbon-based Wild Side.
