Celebrity chef Jean Georges has expanded his Michelin-starred restaurant empire in Vancouver’s highest building, the Shangri-La Hotel, situated in the heart of downtown. The menu has classic dishes done with a modern flai, such as Dungeness crab dumplings with Meyer lemon and celeriac tea and sautéed Nova Scotia lobster with butter cabbage and green chili. Blonde wood tables are deliberately spaced and paired with red banquettes and white chairs. Seating options include the bistro and bar, as well as a seasonal outdoor terrace.
