Aqua Roma and Aqua Tokyo
The über-chic modern dining room and towering, panoramic harbor views are stunning, but the cuisine—half Japanese, half Italian—is just as bold, with a structural integrity that gives the vistas a run for their money. Standout dishes on the “Roma” half of the menu include several excellent risotti. Of the “Tokyo” offerings, the salt-grilled black cod and steamed king prawns with green chile-yuzu sauce are must-tries. The upstairs bar is a swanky place for after-dinner Aquatinis (made with Absolut vodka, lychee liqueur, Chambord, and gold leaves)—but there’s a hefty minimum charge meant to discourage anyone sneaking in for a quick peek.
