This "modern American diner" has a split personality. Skillet Street Food, the Airstream trailer/food truck, has been roving Seattle since 2007, offering chef Josh Henderson's seasonal lunches, while the brick-and-mortar restaurant opened in 2011 in Capitol Hill. The restaurant puts classic diner features like counter seating and private booths, into a relaxed, loft-inspired space (think exposed duct work and pendant lighting). Craft burgers and fried chicken share the menu with braised rabbit and steak frites. Skillet’s cult-hit bacon jam (smoked pork rendered with spices and caramelized onion) is available for sale from both truck and diner.
