This is a place where you can add foie gras to anything. In a busy, not particularly elegant corner of downtown Seattle, Michael Mina's RN74 hides like a secret behind dark windows. Inside, an entire wall is devoted to the wine list—crafted to look like a train station time table—and front couches fill with well-heeled happy hour devotees. Modern French fare includes steak frites au poivre and roasted chicken, but you can add foie gras to anything—seriously. The bacon and sweet corn hush puppies may not be exactly French, but no one's keeping track when there's a 50-page wine list to peruse.
