This downtown Santa Fe establishment has been around for nearly 40 years, and the organic Mexican and New Mexican cuisine is legendary. Owner and executive chef Katharine Kagel has published two cookbooks and won a James Beard Award, and locals and tourists line up for her creations. Try the Red or Green Chile Organic Enchiladas, or, if you’re vegetarian, the Quinoa burger. If you’re feeling sociable, have a seat at the communal table, a round wooden 12-seater from Kagel’s 1970s home.
