When you're based in a city as beautiful as UNESCO World Heritage site Quebec City, views are of utmost importance. Le Ciel is the only revolving restaurant in Quebec—it went through a redesign by architectural firm Lemay Michaud in 2014 and gives diners a full 360-degree view of the city in under two hours. The cocktails are a great way to start or end an evening—one local favorite is Quebec-made Gin Ungava mixed with Campari and melon water. Vegetarian options can, at times, be difficult to find in Quebec, and Le Ciel has some winning options, such as the spätzle (soft egg noodles) served with wild mushroom, lima beans, kale, and local cheese.
