Inside the Ritz-Carlton Orlando, Grande Lakes, is the award-winning restaurant of chef Norman Van Aken, a member of the James Beard Who’s Who list. The New World cuisine of Norman’s fuses the flavors of different global regions including Latin, Caribbean, and Asia. Signature dishes include Curaçao-scented foie gras "French toast" and pork cheek ropa vieja. The restaurant has a spacious circular layout with light-colored banquettes set against the walls between the tall, arched windows overlooking the golf course and lake. A central ring of tall glass- and wood-encased wine racks encircles tables inside, with more banquettes and white-clothed tables around the outer edge.
