Get to the greenmarket shortly after it opens in the morning and you'll find a cadre of well-known New York City chefs perusing the stalls, searching for ingredients and inspiration. Held four days a week (Monday, Wednesday, Friday, Saturday), the market lines the northwest perimeters of Union Square Park. Purveyors of baked goods, homemade cider, and other artisanal products peddle their goods alongside farmers selling seasonal produce like cardoons, pea shoots, quince, Concord grapes, ramps, black currants, and 88 different apple varieties; local-grown and milled rye and cornmeal flour; and meat and seafood like fresh rabbit loin and wild-caught bluefish, squid, and bonito.
