This wildly popular ramen shop hailed by top chefs like David Chang comes from an unlikely source: Ivan Orkin, a self-described Jewish guy from Long Island. Starting with a successful-against-all-odds spot in Tokyo, Orkin brought his ramen home with a slurp shop in Gotham West Market and the flagship location on the Lower East Side.
