Bien Cuit owner Zachary Golper has made this tiny Boerum Hill storefront a citywide favorite with his rustic artisan loaves and pastries so flaky they shatter upon first bite. The secret is his long, slow resting process, which gives even run-of-the-mill loaves a deeper, more nuanced flavor than you'll find at the average bakery. Though the viennoiserie are fabulous, the breads are the real game-changer here—if you're not willing to commit to a whole loaf, stop by for one of the house sandwiches or tartines before venturing out to explore the rest of the neighborhood.
