The décor here is inspired by the Styrofoam coolers used to transport meat—and surprisingly, it manages to look artful. Sala de Despiece is all about prime ingredients: choice beef, regional cheeses, and peak-of-the-season vegetables. They take no reservations and have only a few chairs, so arrive early if you want to sit down—or book one of the nightly classes for groups of up to 12 at the Despiece Academy next door.
