The acclaimed Australian chef garnered a Michelin star at her last post, as head chef at Petersham Nurseries. Here, Chef Gyngell is turning out sophisticated, thoughtful dishes, like scallops with green tomatoes, preserved lemons and chili, or filet of beef with Jersalem artichokes and cafe de Paris.
