At this waterfront spot in Manzanillo, diners can choose from indoor seating and beachfront tables made of tree trunks. Chef Andy Cook Campbell, a former lobster diver who really gets seafood, turns out Caribbean favorites like (of course) lobster Caribeño, whole fried snapper, and creamy coconut-milk rondón soup. There are even fresh blended smoothies. Campbell also hosts cooking classes and a “reef-to-plate” tour, bringing guests on free dives for lobster, then cooking their catch.
