With its massive, glowing white bar and decked-out crowds, Departure feels more like a trendy L.A. hot spot than a Mile High restaurant. Diners adore this new Pan-Asian restaurant from Portland-based chef Gregory Gourdet (you may know him from Top Chef) for high-grade sushi, dim sum, inventive bibimbap, and Vietnamese duck curry. If you can't nab a seat in the splashy downstairs dining room, head to the rooftop lounge—aptly named Departure Elevated—for panoramic mountain views and the same craft cocktails and premium sake.
