A vineyard-free urban winery that proves Colorado is not just about beer, Infinite Monkey Theorem (IMT) opened in 2008 and began making wine in a 15,000-square-foot warehouse in River North. Predominantly using grapes from the Western slope, IMT throws out the pretense (there is even wine in cans) to prove that delicious wine can come from anywhere. They also throw a really fun party; the boisterous IMT tasting room features music, food trucks, and even a slushy machine when the winery is "in the mood."
