This 1862 Mission Revival resort doesn’t look a day over 50, thanks to its modern bohemian-chic sentiments like bamboo chandeliers and fluffy spa robes. The Spanish-style lodge is adults-only and looks out over a lawn-lined pond. The grounds are dotted with palm trees, rose gardens, and fountains, but its real centerpiece is the recently renovated Olympic-size mineral pool, heated by a geyser to 100 degrees.
