Jean Georges Vongerichten disciple Eric Desbordes is the man who makes magic in the kitchen, turning out appetizers like artichoke velouté with seared foie gras and black truffle emlusion, or local ceviche with exotic fruit and coriander, and herb risotto with tuna carpaccio, ginger, and lemon. The main courses range from a tender roasted veal chop with porcini mushrooms and parsley fricassee to roasted sea scallops with fried squid, chorizo and beans. Set aside three hours—at least—to enjoy every bite, and the unbeatable setting on top of the rock.
