Sitting at this newly expanded bar, which is at the top of the Eden Rock Hotel, is like drinking up a piece of St. Bart’s history. The vibe today is slightly more chi-chi compared to decades ago—and yes, the cocktails are more expensive. But they’re more inventive too, which makes the whole experience feel like a piece of theater. The bartenders go out of their way with presentation (regular customers, for example, get their own monogrammed “horn” to drink out of) and you can even order salmon crispy sushi as a pairing. If nothing else, get the towering La Corne On the Rocks cocktail—a concoction of rum, Chambord, fresh raspberries, mint, and lime juice—which comes in a mini plastic vessel, all tied-up in a bow with a signature red and white straw for sipping.
