There’s a new best baguette in town.
Syndicat des Boulangers-Patissiers du Grand Paris, the Parisian bakers union, last week awarded the honor of “best baguette” to the Brun Bakery in the city’s 13th arrondissement.
Baker Sami Bouattour is the man behind the award-winning bread. He was awarded a €4,000 ($4,350) cash prize and a year-long contract to supply the baguettes for the president at the Elysée palace. But he is no newcomer. In 2015, Bouattour’s baguette was ranked second-best in all of Paris.

Bouattour will be honored at the Fête du Pain (bread festival), a 10-day festival beginning on Saturday outside of the Cathedrale Notre Dame, by Paris Mayor Anne Hidalgo.
Qualifications for the best baguette are strict. The loaves must measure between 55 and 65 centimeters (21 to 25 inches), weight between 250 and 300 grams and contain no more salt than 18 grams per kilo of flour. The use of “improvers” is prohibited.
Nearly 200 baguette contestants were judged based on their smell, taste, appearance, crispness and cooking.
