Toast of the Town: The Don Juan Mule
How does one survive a blizzard? By drinking tequila and chili liqueur, of course.
Though whiskey is the preferred drink for Aspen locals, this world-class resort town attracts a varied palate. At the Sky Hotel’s 39 Degree Lounge, tequila is staking its claim for the crown with the Don Juan Mule.
“Tequila is the star of the drink and we use Don Julio for that—there's a lot of loving in this cocktail,” explains bartender Shaun Sylvester. “Before here I was in San Diego and I got a lot of tequila training. We started playing around with ancho reyes a lot, and it’s a very spicy chili liqueur. It’s hard to work with and it took about a year of messing around with flavor profiles before I was able to create an even balance. The cocktail has a kick to it and that goes great with the ginger beer.”
