Thanks to the mad inventiveness of its chefs, this Basque town has a trio of Michelin three-starred restaurants—compare that with nine for all of Germany. Located on the coast of Bahía de la Concha, San Sebastián has long been known for its sublime seafood and the hyperfresh produce grown in the lush, hilly farmland that lies just beyond its borders. And in recent years this metropolis of Belle Époque architecture and medieval alleyways has become the epicenter of Spain’s new-wave cuisine.
