It’s New Year’s resolutions time, when people commit to living healthier, going to bed earlier, or maybe just spending less time on Facebook. And it can also be a time to try something brand new or have an adventure.

There are plenty of vacations that can provide you with a chance to travel while learning a new skill or experiencing something you’ve never done before.

Here are a few ideas.

Learn to surf in Mexico

W Punta de Mita, a new beach resort located on Riviera Nayarit in Mexico, has beds with headboards made of surfboards and private patios with surf-inspired wall art. It’s located on a beach that’s a good spot for learning to surf and has private and group surf lessons that come with souvenir GoPro photos.Guests can also browse local boutiques in Sayulita, head to the spa, or order ceviche from a vintage 1950s Chevy truck parked right on the sand.

Learn the art of cooking in Peru

The chefs at JW Marriott El Convento Cusco don’t just cook meals inspired by Andean cuisine — they also offer cooking lessons. Lessons focus on locally sourced ingredients from the surrounding Andes region and Sacred Valley of the Incas, and cover five courses. Cooking includes a tour of the local Mercado San Pedro, where the chef sources the majority of the hotel’s fruit, vegetables and dairy products from local purveyors.

The tour stops at the vendor stands where guests can sample ingredients such as chirimoya, lucuma, queso andino, coffee and quinoa. Back at the hotel, guests can participate in a “cook-and-eat-as-you-go” lesson. Appetizers typically include causa rellena and ceviche; main courses involve quinoa-based dishes and lomo saltado, and desserts are inspired by native fruits like chicha morada and cherimoya.

Learn the Samba in Brazil

Rio de Janeiro is known for its music, including samba, bossa nova and Brazilian funk. From Copacabana to Ipanema Beach, Rio is filled with places to catch live entertainment and tons of street performers. JW Marriott Hotel Rio de Janeiro joins in the musical experience by bringing in a local samba school to teach guests how to master the Brazilian dance. Samba lessons are followed by a professional samba show.

Learn to winter cycle in Minneapolis

There are plenty of vacations where you can travel from place to place by bike, but have your tried winter cycling? Le Meridien Chambers Minneapolis has partnered with Priority Bicycleson a “winter cycling” program that allows guests to ride in the snow on all-weather Priority Continnuum bicycles. With the proper gear and the hotel’s winter bikes, guests can learn how to ride through the snowy season on safe paved trails around the lakes of Minneapolis.

Learn to fly fish in Georgia

At the Barnsley Resort, a 3,000-acre estate in the foothills of Georgia’s Blue Ridge Mountains, travelers can learn a brand new skill: fly fishing. The resort has several on-site ponds and offers lessons with instructors. Anglers looking for a more in depth experience can spend a full day with expert guides from Cohutta Fishing Company and learn rigging techniques, knots and how to read the water when fishing.

Learn to scuba dive in Australia
