Vail
Larkspur
Located at the base of Vail Mountain, Larkspur is the brainchild of chef-owner Thomas Salamunovich, whose French culinary training influences many of the New American dishes. The high-ceilinged dining room has alder-wood accents, a wall covered with origami hummingbirds, and an exposed kitchen. The cuisine makes use of seasonal ingredients fresh from the market, so menu selections change weekly and may include dishes like foie gras torchon with a yuzu-pear butter, and roasted free-range chicken with Yukon Gold potato purée.
Insider Tip:
Located only a mile away from the restaurant is the Eagle Bahn Gondola company—the only one that provides service to the top of Vail Mountain.
