Yet, when Giacomo Pasquini began helming the kitchen in 2010, he wasted little time establishing Vertical as one of the Financial District's top Italian restaurants. The kitchen makes pasta from scratch daily, while Pasquini's fresh seasonal dishes rely heavily on local ingredients like farm-fed Ontario beef, and his seafood selections have earned the Ocean Wise seal of approval for sustainable sourcing.
