The chef's Tokyo venue—located on the 36th floor of the ANA Intercontinental Hotel—displays Gagnaire's trademark subtlety with a neutral-tone color palette for the fixtures and upholstered furnishings which allow the restaurant's incredible views over Tokyo to take the spotlight. On the menu, Gagnaire's characteristic flavor contrasts are found in dishes such as tarragon and onion stuffed marshmallow with tomato confit.
