Descend a grand, winding escalator to this classic American steakhouse, where velvet ropes and burly security guards keep gawkers at bay and make those with reservations feel even more special. The dining room, all plush chairs and banquettes, faces the forest and wall of water behind Wynn’s otherworldly Lake of Dreams. Start with chef David Walzog’s duo of foie gras: hot and cold, and seasonally inspired, it might come with Calvados and sautéed apples one night and huckleberries the next. Wet-aged Nebraska beef steaks cooked over an open flame are the big draw, but SW serves a nontraditional (but sublime) lobster bouillabaisse—an entire Maine lobster in a broth bursting with red snapper, shrimp, langoustines, and giant sea scallops.
