Located just off the Strip inside the MGM Grand, Diego serves traditional Mexican fare in a colorful dining room adorned with red banquettes, light green pillars, hot pink chairs, and an eclectic array of hammered tin mirrors. The menu includes signature items like the pollo al horno con mole (wood-oven roasted chicken with Oaxacan red mole), while the bar offers 125 agave tequilas, margaritas made with fresh lime juice, and the popular Michalada—a combination of beer and Bloody Mary seasonings. Also a favorite here is the after-dinner coffee served with thin slivers of dark chocolate.
