A pioneer of Tallinn's young dining scene, chef Michael Bhoola has withstood the ebb and flow of trends since opening in 2000. Excellent dishes such as rabbit terrine with pistachios and red-currant marmalade are served in a space with red Jeff Koonsesque hanging lamps and a winding stainless-steel staircase.
