Serious seekers of culinary and wine knowledge have flocked to this Napa Valley campus since 1995. The roster of food and wine courses here is formidable, ranging from one-day hands-on cooking demonstrations—in artisanal bread-baking, say, or the flavors of Asia—to months-long professional certification programs for chefs and wine experts. (A great middle ground for visitors is the three-day intensive Taste of Northern California seminar, where participants shop for ingredients, cook, and put together pairings from local wineries.)
For those new to wine tasting, the CIA’s two-hour “Tasting Wine Like a Pro” courses are a great way to get acquainted with the parlance—and proper swirl-and-sniff technique.
