Surrounded by thick stone walls, the hotel has 25 guest rooms fashioned from former friars’ cells. The accommodations range from classic rooms, which have pitchstone flooring and wrought-iron beds, to a grand master’s suite, which includes an 18th-century sitting room and double balconies overlooking Malta and the Mediterranean Sea. The ancient, stone-walled refectory now houses the Don Eusebio Restaurant, which serves regional cuisine inspired by antique recipes.
