In light of the city’s growing interest in cocktail culture, however, the newly minted Fizz Bar at The Mercer Sevilla took a more daring approach by way of award-winning mixologist Diego Cabrera. Housed in the former 19th century Casa Palacio Castelar, the venue’s high-rising spirits shelves take center stage in an intimate setting equipped with black leather banquets, marble bar counter, and autumn-hued velvet chairs. Forgo the ample cocktail offerings and opt for inspired signature drinks such as the Greck Citrics made with vodka, citrus fruits, cucumber, mint, and a quirky impromptu add: pop rocks.
