Housed in a celery-green remodeled craftsman home, this bistro in Phinney Freemont has earned locavore accolades since opening in 2006. Chef-owner Maria Hines's uses local, organic, and wild-sourced ingredients for dishes on her New American menu, which helped her to win the 2009 James Beard Award for Best Chef Northwest. Dinner options include sockeye salmon a la plancha; Skagit River Ranch pork belly; and mini duck burgers served with fingerling chips and house-made ketchup. Tilth's wine list runs 50/50 Northwest and Old World, with a "green glass" pour program promoting organic, biodynamic and sustainably grown wines.
