Co-owners Brian McCracken and Dana Tough's take on new American fare, which relies heavily on local, farm-to-table ingredients, has garnered its fair share of accolades from publications like Food & Wine. While the decor of their urban pub in Belltown is intentionally understated with its beige walls, simple wooden tables, and exposed ductwork, the kitchen's focus is purely on high tech molecular gastronomy. In fact, the chefs use centrifuges to create sauces and liquid nitrogen in their signature dessert presentations. As for vino, personal wines are welcome with a corkage fee, or you can just go with one of 400 bottles stocked by the bar.
