Winner of the James Beard Award for Best Chef Northwest 2010, chef Jason Wilson opened this celebrated New American restaurant in 2005. Located in Madison Valley, Crush is set inside a century-old Tudor-style house with a triangular gable and an outdoor patio. The two dining rooms—one on each floor—are designed in a contrasting minimalist style with cream-colored walls, chocolate brown accents, and white plastic chairs. Combining high-quality international ingredients with local organics, chef Wilson creates signature dishes like sautéed foie gras “steak” and slow-braised short rib. Crush also has an award-winning wine list and a six-course tasting menu.

Insider Tip:

Ask for seats 5, 6, 7, or 8 at the bar; there, you can enjoy views of the kitchen, interactions with the culinary team, and perhaps even some taste testing.
