Co-owners Greg Lundgren and Jeff Scott had virtually no bar experience when they opened their hybrid watering hole and art gallery back in 2005. They say they approached their Capitol Hill bar from the perspective of patrons, and masterminded a space with high ceilings, chandeliers, and paintings by local artists covering the walls, where guests come to enjoy seasonal beers on tap and handcrafted cocktails served with flourishes like hand-squeezed citrus juice mixers. A vending machine sells art for $1 to $20, and the bar menu is limited to cheese trays and flatbread-and-dip platters.
The Hideout's always seeking Discreet Theatre actors to put on performance-art while posing as regular patrons. If you're known for out-there stories, apply at online; performers receive 5-cent drinks all night.
