Santa Fe now has a speakeasy. The Root Cellar, a gastropub and taproom created by chef Greg Menke of Beestro Bistro, is located underneath the Hive Market on the corner of Water Street and Lincoln Street. The pub is brand-new, but it looks like it’s been there 500 years, with a simple, dark-wooded aesthetic and a menu that includes a hearty French onion soup. The bar also serves as a tasting room for Menke’s own Falcon Meadery, so be sure to try a Falcon Cyser, which is mead with hard cider.
