Roli Roti has a meaty heritage like few other food trucks. Butcher Otto Odermatt and his wife Maria imparted the necessary knowledge (and recipes) for son Thomas to continue the family’s Swiss-born rotisserie tradition in the Bay Area. Now, shiny silver trucks roam the region’s farmers markets, delivering herb-rubbed (sometimes organic) chicken and dripping-enriched, roasted potatoes. Pig also occasionally comes into play, in the form of pork knuckle and porchetta, a spiced, juicy loin with a crisp-skinned belly forming a savory outer shell.
