Located within the Waldorf Astoria's Rome Calvalieri hotel in Monte Marlo, a private park above the Vatican, the dining room boasts city views. Beck's menu is based on fresh, quality ingredients and cooking techniques that fuse classic with contemporary. A bed of amaranth grain cradles a poached egg with Albanese white-truffle shavings. A composition of daily fish is served on a salt brick with vegetables, lemon perfume, and spicy foam. The menu changes regularly, supported by a 53,000-bottle wine cellar, and 29-selection water list.
