The limited seating inside, though, fills quickly with diners coming to sample the expertly prepared, yet simple pastas and offal. Once home to a slaughterhouse, the small district of Testaccio has a tradition of well executed secondary cuts of meat, and this restaurant is no exception with dishes like gricia (thick noodles simmered with pork jowl) and trippa alla romana (tripe slow-cooked in tomato and mint).
