This small, five-star hotel set among vineyards in Australia’s Hunter Valley has 10 individually decorated lodge rooms emanating from a central, colonnaded courtyard and furnished with antiques, stained glass windows, tapestries, and recycled old timbers, as well as a separate dressing room and deep double-spa bath. The Oriental Room adds an outdoor plunge pool and an original Picasso print, while the freestanding Chairman’s Suite has a 300-year-old, hand-carved Rajasthani bed, a Louis XV writing desk, and even its own tower. The lodge’s underground wood and sandstone restaurant Nine has also won awards for its seasonal, nine-course degustation menu and regional wines.

If planning to indulge in the wine, ask for room A2S (if available). Wheelchair accessible, it lacks stairs and has only one level.
