Half the delight of going to Morcilla is sitting in the cozy, floor-to-ceiling honey wood–paneled dining room and watching the waitstaff, chefs, and bartenders work their magic. Service here is attentive without being irritating, and the menu by James Beard–nominated chef Justin Severino is a combination of pintxos, montaditos, croquettes, and small plates and platters that are meant to be shared. Start with the sweet and mustardy oysters escabeche before diving into bacalao or jamon croquettes, oxtail montaditos, and more substantial platters of smoked baby back pork ribs with blistered scallions. If the restaurant is full, stand at the bar as the Spanish do with a sherry or a gin mixed with housemade tonic and a pintxo or two.
