This popular Penn Quarter eatery by Chef Peter Smith occupies a boxy, earth-toned space designed by GrizForm Design Architects. Formerly of Vidalia and a James Beard award winner, chef Smith specializes in whimsically creative American dishes featuring seasonal, farm-direct ingredients in unusual combinations. The mostly small plates menu is headlined by dishes like the popular torchon of lobster with exotic melon, truffle gelée, and a roe wafer. Heartier eaters enjoy PS 7's signature cheese steak: a combination of Kobe filet, bresaola, and cheese rolls topped with beech mushrooms, onions, and cheese.
