The Riviera Palm Springs hotel received a $70 million makeover in 2008, and its marquee dining option is Circa 59, designed to evoke a retro Hollywood feel. This three-part restaurant includes a dining room with oversized red chairs and booths; a cabana-like patio; and an outdoor patio with fire pits and pool views. Chef Aaron Burns’ dinner may include seared barramundi in dashi broth and braised lamb shank with portobello mushroom stew. The wine list draws from America’s West Coast.
