One of the few enclaves of authenticity in Disney-designed Celebration, Columbia has perfected old-style Spanish cooking—grilled meats, piles of paella, and a lengthy list of seafood dishes—since its first location opened across the peninsula (in Tampa’s Ybor City) in 1905. This popular clone of the Florida institution is done up like an early 20th-century eating hall, with cathedral windows, leather banquettes, and gentle ceiling fans. The 1905 Salad, a chef’s salad drenched in a tangy, garlic-infused dressing, is said to be from a 100-year-old family recipe.
