Proprietor Sotohiro Kosugi is a third-generation sushi chef, formerly of Atlanta and rural Northern Japan. Flown in five times weekly from regions worldwide, Soto's ultra-fresh seafood offerings range from Ecuadoran semi-fatty tuna to pearly white Japanese Toyama shrimp and Amber Jack straight out of the Hawaiian Islands. The intense, bespectacled Kosugi holds court nightly behind the blonde-wood sushi bar, the focal point of the snug restaurant's minimalist, all-white space.
