As willfully under the radar as an after-hours club, this unassuming West Village sushi bar occupies an unmarked storefront a block from Washington Square Park and stone's throw from the 4th Street subway station. Proprietor Sotohiro Kosugi is a third-generation sushi chef, formerly of Atlanta and rural Northern Japan. Flown in five times weekly from regions worldwide, Soto's ultra-fresh seafood offerings range from Ecuadoran semi-fatty tuna to pearly white Japanese Toyama shrimp and Amber Jack straight out of the Hawaiian Islands. The intense, bespectacled Kosugi holds court nightly behind the blonde-wood sushi bar, the focal point of the snug restaurant's minimalist, all-white space.
Insider Tip:
The door of Soto features no signage, so look for the small white storefront beside Village Leather, just a few steps south of the Washington Place intersection.
