Although Cajun influences abound in the city, there's little high-end food nor dining experiences that are truly Cajun. Set in a converted 19th-century cotton mill, husband and wife chefs Cody and Samantha Carroll tout a panoramically "handcrafted" experience, from the reclaimed pine fittings to the crushed oyster-shell bar. The menu—much of it hunted or farm-raised by the restaurant—brings rural treasures to the city, with river gumbo, pigs' tails, and even boar's heart to the fore. Also expect alligator, quail, and pheasant in an intriguingly authentic venture from young and innovative talents.
