What Cochon is to pork for Donald Link, Peche is, unsurprisingly, to fish. Many local restaurants sanitize the seafood eating experience, but Peche celebrates the viscera of eating it, with whole redfish and snapper arriving to excitable tables of diners. Tuna salad and crawfish bisque are hardly surprising dishes, but the devil is in the details, as it is in the wonderful oyster bar, where the offerings can almost be traced to specific sand banks. The acoustics can make for a relatively lively dining experience, and the design of the dining room is on the industrial side of rustic, but most of the conversation is likely to be impressive reactions to the fare.
